Weekly Harvest Box!

I made this on Friday the 13th......spooky.

Not really but there are a lot of superstitious thoughts surrounding this day. Today marks the first of the two Friday's that are marked with the unlucky number. (July 13th, 2018 is the next.) Here are some facts about the odd holiday

This weeks harvest box is a lucky bounty that includes some awesome abundance that we have had in the Greenhouse. We have had some great spring temperatures, helpful all natural light levels, and spectacular growth in the greenhouse. We started some outdoor flowers this past week. Sunflowers will be popping up in the summer so look out.

Back to the box.

We are including a freshly mixed red and green lettuces that will be slightly sweet and very crisp perfect for the weekly fresh greens that you will need.

We are adding Red Russian Kale in this weeks box. Kale in general has recently become an absolute favorite for health nuts and foodies alike, for good reason too!  Red Russian Kale are high in calcium, vitamins A, C and K, lutein and xeaxanthin, making it an excellent source of support for your bones, skin and eyes. Kale is also very low in calories and can be cooked in any number of ways. Red kale, also called Russian kale, offers a sweeter, buttery flavor. It cooks more quickly than green kale, but can be prepared using the same methods and many more. Red Russian Kale is very versatile can be used for juicing, cooking, and eaten raw (my personal favorite with the recipe below).

Rainbow Microgreens are a great edition to any weekly box because it offers a variety of raw ways to boost your nutritional intake! We mix all of our micro flavors into a 4 oz container that contains superfood levels of vitamins A, C, and E, calcium, and potassium. I utilize this mix for eggs, juicing, salads, and a solid topping on my favorite recipe for an Avocado Toast. This GimmeDelicious recipe with TexSelect Rainbow mix is a solid choice for a healthy 5 minute snack topped with flavor and mindful nutrients!

Dill is a personal favorite of mine in the spring because of its distinct and fresh flavor. "Clean and green" I say. B & G garden grows some of the best asparagus in Texas and is a perfect companion for a recipe that I used with B & G asparagus and our own farm fresh dill from Sylvia Fountaine of Feasting at Home.  Check that Spring Orzo, Asparagus, and Fresh Dill recipe here!

Lavender is a great way to unwind. I have found that a couple leaves dropped in a bit of hot water can make a calming tea before a yoga session or soothe you into bed. It is more versatile than that for sure. Lavender has the ability to relieve stress, improve mood, promote restful sleep, lower skin irritation, prevent infections, reduce inflammation, eliminate dandruff, and soothe stomach bloating. But don't take my word on it, try it yourself!
